First, I would like to apologize for neglecting you, blog, for over a month. Secondly, I would like to say that I have a problem. A very big problem.

Hi, I’m Danielle, and I’m addicted to Pinterest.

Pinterest is a website that allows you to “pin” images you’ve come across online onto an imaginary board. You can re-pin things on to your board that others have pinned. It’s like twitter for cool stuff found online, but exclusively with images… it’s addicting.

At first it was just something interesting I happened to just stumble upon (not via StumbleUpon.com). I thought it was a cool concept and decided that I would sign up so I can start my own inspiration boards for my cakes and what not. So I did exactly that.

Then I found myself making a board for skulls…. And cute things… And living spaces… And beauty crap. People use it to plan their weddings. I use it to procrastinate.

For the past three weeks, I have sat down to write a post. I will open my blogger, check my stats, open a new post page, write the title…………….. And then open Pinterest. Two hours later, I have a ton of really cute doggie pictures pinned. Cool.

I’m doing it right now. Boom. There go 30 minutes of my life. But hey! Now I’ve figured out what Harry Potter tattoo I want, but will never get.

 

Anyway, here is my favorite breakfast! Or lunch, or dinner, depending on how lazy I am that night. Fresh, fast, and really tasty.

 

Cottage Cheese and Tomato on Baguette Breakfast

Makes 1 or 50 servings


Baguette (or any bread you have around)

Cottage cheese
Sweet cherry tomatoes, sliced thinly
Good quality Extra-Virgin Olive Oil
Chives, chopped
Salt and freshly ground pepper

Toast the baguette or other bread. Spread some cottage cheese on top. Top it with slices of the cherry tomatoes. Sprinkle with chives. Drizzle with olive oil. Season with lots of salt and black pepper.
