Been feeling very uninspired in general. I know  that Instagram/content creation fatigue is a real thing for so many of us. Sometimes I feel like posting on Instagram sucks the life and drive out of me. I know how to cook. I know how to write recipes. I know how to feed people. Never did I think social media would become such a large part of this work.

Bean and Egg Toast Recipe! This is one of my favorite toasts that I've ever made. It's easy and quick to make with tons of spiced (kind of) refried bean situation that will actually keep you full. Not to mention, you throw a fried egg on top and you're golden. Breakfast, brunch, lunch, snack and even dinner. Toast can happen at all times of the day. This recipe works great with chickpeas, pinto or black beans too!

THE THINGS
2 tbsp olive oil
1 clove garlic, grated on a microplane
1⁄2 tsp paprika
1⁄2 tsp dried oregano
1⁄4 tsp ground coriander
1⁄4 tsp ground cumin
1 can great northern beans, drained and rinsed
Kosher salt
2 slices 100% dark rye or pumpernickel bread, pan fried or toasted
2 fried eggs
Flaky sea salt, for garnish
Fresh cilantro leaves, for garnish

THE WAY
In a skillet, heat olive oil over medium heat. Add garlic and cook until just fragrant, 30 seconds. Add paprika, oregano, coriander and cumin. Cook until oils have developed, 30 seconds. Add beans and toss to coat. Season with kosher salt and cook until beans are warmed through, about 2 minutes.

Top the toast with a generous portion of beans and lay a fried egg on
top. Garnish with flaky sea salt and cilantro leaves.

Never forget that you can bake your cookies in muffin tins. I've been doing this for years! You get these insane, almost lava cake like cookies. Deeply nutty flavor from the brown butter and rye flour with ooey gooey centers filled with large pools of chocolate and finished with sea salt. These cookies have never failed me.

This is my Kale & Basil Pesto which I can't live without (RECIPE BELOW). I usually keep a bowl of this in the fridge since it's a life saver when I'm looking to add something flavorful to my meals and snacks. Just this week I used some for my toast with tomatoes (in my reels), a meatball dish for my kids, slathered on a quick seared chicken breast, and in my scrambled eggs! Save this post!

To keep it vibrant and fresh, I make sure to cover it well with plastic wrap, pressing as much of the air out as possible and making sure that the plastic wrap is touching all the way around the bowl so no air can get in. I do this with guacamole too. (Little secret, this vibrant green pesto in the reel was made 5 days before shooting). 

1/2 bunch lacinato kale, stems removed & roughly chopped
10 basil leaves
3/4 cup grapeseed oil or canola
1 clove garlic
1 cup grated parmesan
1/2 cup pine nuts
2-3 tbsp lemon juice
1 tsp white miso (optional)
Kosher salt

Blanch the kale in a pot of heavily salted boiling water, until slightly wilted, 30 seconds. Immediately drain and rinse under cool water. Squeeze as much water out of it as possible. 

Place kale and all the remaining ingredients in a blender or food processor. Blend on low.  You can leave it as a rough texture like I do or blend longer until smooth. 

Keep very well covered in the fridge for up to a week.
